Mashed Cauliflower

I've been pretty busy recently, but I wanted to share a fun and healthy recipe with you guys. I first found a similar recipe a few years ago on the South Beach Diet and it's great! In the SB cookbook, they call it "Surprise Mashed Potatoes," as it is a really good and perfectly healthy substitute for mashed potatoes!  So, if you're looking for a way to reduce the carbs in a meal but you still want to feel like you're eating your delicious 'mashed potatoes,' try these!


 Cheesy, Mashed Cauliflower 
- 1 head of cauliflower, chopped
- 1/2 cup cheddar cheese, shredded
- 2 tbs butter or butter substitute
- 2 oz fat free cream cheese or neufchatel
- 1/2-1 tsp garlic powder
- salt and pepper to taste
- turkey bacon bits, for garnish

 Boil the cauliflower for about 10 minutes until fork tender. Drain in a colander then place in a food processor. Process until you reach a smooth consistency.  If you don't have a food processor you can use an immersion blender or break the cauliflower up with a hand mixer on high.

 Stir in the butter, cream cheese and shredded cheddar over low heat. Add garlic powder and salt and pepper to taste.  Garnish with a sprinkle of cheese and turkey bacon bits, serve immediately.
Serves 4-6

  1. I've seen this recipe a few times, but I wonder if someone who LOVES mashed potatoes would be fooled by it? does the taste/texture actually imitate potatoes? because it sure looks like it would, and it would be a much healthier way to get my hubby to eat more veggies!

  2. Oooh, yum! I definitely am bookmarking this to try! Ever since I made a cauliflower gratin at Christmas, I've been on the lookout for interesting cauliflower dishes.

  3. My husband loves potatoes and this went over really well with him! I think it all depends on how well you process the cauliflower. You don't want to have any chunks of cauliflower left. And, if you make sure to season well and top with cheese or your favorite potato toppings, I think it'll be great!
